Panzanella di Bufala

Ingredients
3 Large Heirloom Tomatoes, cut into chunks
½ Small Red Onion, thinly slices
1 Small Cucumber, sliced into half-moons
10-12 Fresh Basil Leaves
2 Tablespoons Capers (optional)
100g (½ cup) Cherry Tomatoes, halved
4oz (115g) Buffalo Mozzarella, torn into pieces
¼ Cup Gaeta Olives, pitted
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Red Wine Vinegar
Salt & Black Pepper, to taste
Instructions:
In a large bowl, combine the heirloom tomatoes, cherry tomatoes, red onion, cucumber, capers, and Gaeta olives.
Tear or cut the gluten-free fried pizza dough into bite-sized pieces and add them to the bowl.
Drizzle with Extra Virgin Olive Oil and red wine vinegar, then season with salt and black pepper.
Toss gently and let sit for 10 minutes to absorb flavors.
Add torn or sliced Buffalo Mozzarella and garnish with fresh basil leaves before serving.
