Pizza Pianeta

With a light and fried Caputo crust, velvety ricotta, and broccoli rabe, this unique masterpiece creates a harmonious blend of flavors that bring fresh ingredients to life in every slice.

Ingredients

Dough

· 260g of Traditional Neapolitan Pizza Dough

· Extra virgin olive oil


Topping and Filling

· 90g Ricotta

· 80g Broccoli Rabe

· 2-3 Cherry Tomatoes, quartered

Instructions:

  1. Fill and heat your deep fryer with Extra virgin olive oil and set to 350F.

  2. Stretch your dough into a rectangle shape.

  3. Make one horizontal line on the top and bottom, one side of ricotta and one side broccoli rabe.

  4. Then bring both outside edges on both sides to the middle and seal them together.

  5. Grab both sides and gently set it into the fryer. Using your skimmer splash oil onto the pianeta to help evenly cook both sides.

  6. Fry the pianeta to golden brown then flip it and do the same to the other side.

  7. Once it is fully cooked strain it to remove any excess oil and place it on a wooden board.

  8. Using a pastry bag with a star tip add three ricotta dollops and top with a quartered cherry tomatoes.

  9. Serve and enjoy!
